Red Flannel Hash and Bagels


Breakfast is the most important meal of the day, so make it count by getting all the food groups together in one meal!

Organic Eggs : 9 Eggs
Full Circle Extra Virgin Organic Olive Oil : 500 ml / 17 oz Bottle
White Potatoes : 8 Whole
Beet : 2 Whole
White Onion : 1 Whole
Kurson Kosher Turkey Ham : 1 Package
Eistein Bagels: Sesame, Original, Parmesan : 12 Bagels total
Philadelphia Cream Cheese : 2 Packages

Heat oil in a large nonstick skillet over medium-high heat. Add potatoes and cook, stirring occasionally, 10 minutes or until browned.  Meanwhile, wash and cube beets, then place in sauce pan with boiling water for 1o minutes.  Once beets have reached a soft boiled stage, extract from water and add to potatoes.  Add ham, salt, and pepper and cook for 2 minutes, stirring occasionally, until hot.

With back of a spoon, make 8 indentations in potato mixture. Crack an egg into each indentation. Cover, reduce heat to medium-low and cook 6 minutes or until eggs are cooked to desired doneness. Remove from heat; sprinkle with scallions.  Toast up bagels and enjoy!
